Grilling…It’s Not Just For Meat Eaters Anymore…

Let’s face it, everyone loves grilling in the summer but the fact of the matter is, the vegetarians almost always get slighted. The typical “veggie kabob” always seems to be the go to option for our vegetarian friends. But doesn’t that get boring after awhile? I’m bored just thinking about it and I’m not even a vegetarian!

That being said, today I’m here to share with you one of my favorite vegetarian grilling recipes that ventures way outside the box of the “veggie kabob”. Today, I have for you, Grilled Portobello Parmesan, it’s my ooey gooey grill able homage to Italy!

Grilled Portobello Parmesan

Ingredients

  • 4 – Portobello Caps
  • 1 cup – Balsamic Vinaigrette
  • 1 cup – Tomato Sauce
  • 4 Slices – Provolone Cheese
  • 1/4 cup – shredded parmesan cheese

Directions:

Start off by removing the stem from all four portobello caps so you have a nice flat surface to work with. Next, marinate the portobello caps in the balsamic dressing for at least one half hour.

Once you have your caps marinated and your grill sizzling hot, start grilling the mushrooms starting with the stem side down. After about 5 minutes on the grill flip the caps.

Put about 2 oz. of your favorite tomato sauce (I prefer to make my own) in the center of mushroom and spread slightly. After about another 5 minutes, lay on 1 slice of provolone cheese per cap and allow to melt.

Once your cheese is nice and melty, remove the mushroom to your plate and top with a sprinkling of parmesan cheese and enjoy! Though you may want to allow your cheese to cool slightly so you don’t burn your mouth. 🙂
