Cajun Fried Rice Recipe
Ingredients:
- 1½ tbs soy sauce (use lite soy if preferred)
- 2 tsp toasted sesame oil, divided
- 2 large cloves garlic, minced
- 2 tsp minced gingerroot
- 3 tbs Tabasco sauce, divided
- ½ lb peeled crawfish tails or shrimp
- 3 eggs
- 1¼ tsp salt, divided
- 3 tbs peanut oil, divided
- 1 small onion, quartered and thinly sliced
- 3 cups cooked rice
- 1½ cups bean sprouts
- ¾ cups frozen green peas
- Black pepper to taste (use red pepper if preferred)
- 3 tbs cooking oil (use virgin olive oil if preferred)
Directions:
- In a small bowl combine soy sauce, 1 tsp sesame oil, garlic, ginger, and 2 tsp Tabasco
- Mix well, stir in crawfish, and set aside
- In another bowl beat eggs with ¼ tsp sea salt, 1 tsp sesame oil, and 1 tsp Tabasco sauce
- Heat wok or large skillet until hot; add 1 tbs oil
- Add crawfish mixture; stir-fry 3 to 4 minutes or until crawfish are done
- Remove crawfish mixture from wok and set aside
- Add 1 tbs oil to wok and bring to heat
- Add onion; stir-fry 1 to 2 minutes and remove
- Add 1 tbs oil to wok and bring to heat
- Add egg mixture; stir-fry 1 minute or until done
- Add cold rice; stir-fry 3 to 4 minutes
- Add crawfish mixture, cooked onions, bean sprouts, peas, ¾ tsp salt, and pepper; stir-fry 2 minutes or until all ingredients are hot
