Ingredients:

  • 2 tbs oil
  • 2 lbs smoked hot sausage – cut into 2” lengths
  • 1 large onion – finely diced
  • 1 large green bell pepper – finely diced
  • 3 stalks of celery – finely diced
  • 4 cups of water
  • 1 15 oz can of tomato sauce
  • 3 tbs salt
  • 1 tsp freshly ground black pepper
  • 2 cups of converted rice

Directions:

  1. Heat oil in a 5 qt pot over medium heat
  2. Add sausages – cook until brown – about 5 minutes
  3. Add onions, green pepper, celery – cook about 3 minutes while stirring
  4. Add water, tomato sauce, salt, and pepper
  5. Heat to a boil – stir in rice – continue stirring until the sausage comes to the top
  6. Reduce heat to a simmer – cook covered about 20 minutes
