Ingredients:

  • 12 oz. air dried beef – torn into bite size pieces
  • ¾ cup flour
  • ¾ cup unsalted butter
  • 6 cups milk – whole or 2%
  • 1 12 oz bottle of dark beer, preferably one of the Grillmaster’s homebrew
  • 16 slices of Texas garlic toast
  • Fresh ground black pepper

Directions:

  1. Heat Dutch oven until hot over high heat
  2. Melt unsalted butter
  3. Add dried beef pieces and cook until edges frazzle – about 10 minutes
  4. Reduce to medium heat
  5. Stir in flour and cook until mixture is a thick paste – 10 to15 minutes
  6. Slowly stir in milk until all flour is incorporated – NO LUMPS
  7. Cook until mixture thickens, frequently stirring, – 10 to 15 minutes
  8. Add freshly ground black pepper to taste and cover 5 to 10 minutes
  9. When mixture over-thickens, use at least 6 oz of The Grill Master’s home brewed dark beer to thin. If The Grill Master’s home brew is unavailable, use whatever you like
  10. Serve over grilled Texas garlic toast slices
