• 1 Onion, minced
  • 2 Tbs of butter
  • 1 Tbs of olive oil
  • 6 Medium potatoes, peeled and diced
  • 2 Large stalks of celery, diced
  • 1½ C diced ham
  • 3 Tbs flour
  • 1½ Tsp salt
  • ¼ Tsp white or black pepper
  • 3½ Cups milk


  1. Sautee onion in butter and oil until it starts to get translucent
  2. Add potatoes and stir to coat with butter; cook slowly a few minutes; stirring to prevent sticking
  3. Add celery, cover, and cook 10 minutes; being careful not to let them brown
  4. Add diced ham and cook covered, about 10 minutes longer, until vegetables are almost done
  5. Remove from heat and thoroughly stir in flour, salt, and pepper
  6. Add milk, 1 cup at a time
  7. Simmer covered 15-20 minutes, being careful not to let come to fast boil
  8. Add salt and pepper to taste
