Creole Jambalaya Recipe

Ingredients:

  • 2 tbs butter or margarine
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 8 green onions, chopped
  • 2 celery ribs, chopped
  • 3 cups cubed cooked ham (1 lb)
  • 1 lb Cajun or smoked sausage, sliced
  • 1 (8 oz) can tomato sauce
  • ½ tsp salt
  • ½ tsp freshly ground black pepper
  • ¼ tsp ground red pepper
  • 5 cups hot cooked rice

Directions:

  1. Melt butter in Dutch oven over medium heat
  2. Add onion, bell pepper, green onions, and celery; saute until tender
  3. Add ham, sausage, tomato sauce, salt, black pepper, and red pepper; cook, stirring occasionally, 20 minutes
  4. Stir in rice, cover, and cook, stirring occasionally, 30 minutes over low heat

Yield: 8 servings
