– I used hot italian sausage instead of pork sausage
– No celery
– For Cayenne pepper to taste, I used fresh cayennes and tabasco peppers from my garden
– I added 2 different hot sauces that I liked to heat it up futher (I multiplied the recipe for quanitity and I think the shear volume of it diminished the heat of the fresh peppers used)
– Melinda Naga Jolokia (Very Hot, but great flavor, use sparingly)
– Pain is Good Jalapeno Hot Sauce ( I like this one because it is more carrot/vinegar based, but still provides some heat)
I think you have to go for that middle ground where people’s mouths feel the heat but keep them coming back for more!

I made a couple of modifications to it that I wanted to pass along.
I added a package of Hot Italian Sausage as well as the country pork sausage. I also chose the diced tomatoes that were Italian spiced (seasoned with Italian spices).
This recipe (with those two changes resulted in the best pot of chili that I have ever had! My kids ate several bowls of it – and that never happens :-).
It was even better the next day (I made a lot!). The seasoning all had a chance to meld together and when I heated it up in the microwave at work – it was awesome!
This chili recipe is highly recommended! I can see why it was an award winning chili cookoff recipe!
